Hi!
If you want to fill in all the numbers in your tool, you should put in whatever your water pH is and what your water bicarbonate is. These things are included on your water report. Other people here can't know these numbers.
That said, I don't use them for the reasons explained in my water adjustment article. Beersmith probably wants these for the same reasons the tool I use in my guide wants them: To try and guess your end pH. That's always a crapshoot as a I explain in my water adjustment article. You're best to use an actual pH meter.
