Can I use the wires I've salvaged from an ethernet cable for the wiring on my external probe lead? I'd still wrap them in stainless steel wire rope to help protect them from accidental breaks. As well as wrapping in two layers of expandable braided sleeving and black shrink wrap as per the guide.
They're not teflon coated or rated to 300F as far as I can see, though.
