Can someone take a minute to check my math?

Brewing the bock recipe from "Brewing Classic Styles"

OG: 1.070

Boil volume 14.9 gal

Final volume 12 gal

starter wort gravity: 1.036

Pitch rate: Pro Brewer 2.0

4 liquid packs

then: 1 step of 4L and 20 oz. DME using stir plate aeration
2nd step of 4l and 14.5 oz. DME using stir plate

Seems like a lot?

Any help greatly appreciated!!

Some comments:

- 1.036 to 1.040 is the right starter gravity
- 1.070 lager would need benefit from the "Pro Brewer 2.0 (High gravity lager)" rate. 12 gallons of this needs 1549B cells according to the calculator. That is indeed a lot, but that's high gravity lagers.
- No need to use 4 packs of liquid yeast. One of the main reasons for making a yeast starter is that you only need 1 pack. saves money. Each pack is 100B but only when new, and since you're going to 1549B cells, extra packs do not help much.
- Don't know how old your packs are, so no idea how many cells you're starting with.
- Assuming the 4 packs are 100% fresh (made today) you have 400B cells.
- Your first step with 4L and 20 oz of DME is a 1.050 wort, not 1.036 wort. It goes get you from 400B to 1199B.
- Your second step with 4L and 14.5 oz of DME is a 1.036. And you go from 1199B to 1352B. So not quite there yet.


I made 11 gallons of 1.070 maibock with WLP833 back on Oct 20, 2018. I was starting with a single pack of yeast and based on age 75B cells were available and I did a first step of 4.5L/1.040 with 18.1 oz DME then a second step of 4.5L/1.044 with 20 oz DME to end up with 1578B cells. The beer turned out beautifully.

1.036 starter gravity is ideal, I didn't want to do a third step so I bumped up a bit to 1.040 and 1.044.
