Thanks Ozarks - that's exactly what I was looking for!! Out of curiosity, can you take a picture of your flat washer/plug and post it or PM it to me? Thank you.
Kal - I accidentally left some water in my kettle for 3 weeks and the anode deteriorated quite a bit. So much that during a brew, it continued to crumble. I already changed out the heating element to a stainless one a year ago but never got around to removing the anode because it wasn't (like you stated) doing any harm. Thanks for the heads up though.

I don’t believe the whole rod is made of the sacrificial material - you could cut it close to the threading and just reinstall too.

You are absolutely correct but for my anode, the base of it was extremely black and looked a bit corroded and rusted too. I was a bit surprised by the rust on it.

I ended up using Ozark's recommendation: https://www.brewhardware.com/product_p/plugwl12.htm
I tried a few different ways but after looking at the picture, it appears that the gasket is on the outside of the kettle. Does that make sense? I tried it and it's working better than having the gasket sit inside the groove of the nut (the gasket is slightly bigger than the groove so it might have been getting pinched while I tightened it up). It also appears to match the instructions to install the ball valves for the HLT (http://www.theelectricbrewery.com/hot-liquor-tank?page=4)
Thoughts?
TL;DR; should the gasket go on the outside or the inside of the kettle?

if you use a washer next to the gasket you can have it on either side, the issue is turning the nut against the gasket, not a good idea this is why he added it to the opposite side of the nut in the picture

Contacted Bobby from NJ.
Me: "I wanted to make sure that the gasket is supposed to be on the outside of the kettle as shown in the picture for the item."
Bobby: "Correct. There's a machined groove in the plug to keep it from squeezing out. You could put it on the inside of the pot under the locknut groove but you'd also have to load up the threads a bit with teflon tape."
Replied within 15 minutes of my original email.
Ozarks is also spot on with the nut causing issues spinning against the gasket.
