I bought a cheap temperature probe online and am not impressed with the weld quality between the probe and the threaded part. Is this typical of all PT100 probes or did I just get what I paid for?
See image for off color, unsymmetrical weld, with random bumps. Seems like this wouldn't be food safe.

Yes you get what you pay for. I've heard the cheap ones like what you got don't have tapered threads. Meaning its near impossible to get them water tight. Can't really tell from your picture.
