Work table and shelving recommendations

In the latter stages of building our new electric brewery, and I’m starting to think/rethink sizes for work tables and shelves. Not talking about the actual brew table- that’s already set. More about the surfaces for work and storage. Initially I was planning on a 24” deep table working surface and 12” deep shelves, but now wondering whether a 30” deep table and 14” or 15” deep shelves would have any advantages. Anyone with experience with this who could offer insights or regrets?

I use 24" deep and have no regrets.

Thanks, kal! I am quite familiar with these links - believe me. Your step-by-step was my bible as I started on this journey.

Glad to hear that the 24" deep table has been a success. I assume then that 12" shelves are sufficient? Also, I notice that you have opted for non-solid surfaces for your shelves. Was this intentional? I was thinking of shelving like this (https://www.webstaurantstore.com/regency-18-gauge-stainless-steel-12-x-48-solid-wall-shelf/600WS1248.html), but wonder if this would be an issue if storing items that may not be totally dry when placed there. Wire shelves or vented shelving would be the alternative

I've been ok with them, though it would really depend on what you want to store on them. I'd make a list / organize and see how much room you need.

Not really. Or should I say, I didn't need or want solid ones as all of the small things I wanted on the other tiny shelves down lower to make them easily accessible. There are lots of small bits and pieces and some tools, and I wanted them to each have their "spot" so that they were always in the same location.

I"m sure they'd dry. My kettles are work surfaces are all pretty wet after brew day cleanup and it all dries. Really depends on what you put on them and if you want them to be able to drip dry or not.
