The switch needs to be rated for the current it carries which will be close to 19-23A. Normally that would be a 30A switch. Now that said, we don't use or recommend switches in our design. We use contactors or relays which are basically remote controlled high current switches. Take a look here in the "How it works" section: http://www.theelectricbrewery.com/control-panel-part-2?page=13
I'd recommend building something similar with a PID/switch/SSR/relay/ but for only one kettle. You can leave out the meters too.
If you prefer, wait a bit as we'll have a single kettle control panel out in the new year too. Meant for extract brewers or all grain brew-in-a-bag (BIAB) brewers. This simplified control panel will be for controlling a single heating element. This single vessel control panel will use the same design principles and safety features as our the 3 vessel control panels available today. Once available, an announcement will be made through our newsletter and on Facebook/Twitter.
