For the last year we have used EZ water calculator for adjusting our water profiles with great results but never added the grain bill info. Always thought it would be nice to get closer to the optimum mash PH and have less if no adjustment needed. This brew I tried it out.


EZ Water had an estimated mash PH of 5.55. No acid added.

At 10-15 minutes into the mash we were at 5.50.

At the end of the 60 minute mash we were at 5.42.

Both in the range but when and what measurement is more important?

In the brew before, EZ Water estimated, with grain info, a mash PH of 5.59 and was actually 5.39.


We also are now measuring at room temperature as mash and boil temps are very hard on our electrodes. We have a bowel with ice water and place a glass with the sample in it and cools rather quick.

Most people target what they get in the first 5-10 mins of mash (Give or take). That said, back when I used to measure at the end of the mash my values were the same. They had not changed. Not sure why yours are changing.
