Thanks JMD887 for that suggestion. In fact, I did not calibrate the PH meter before use. I was that keen to get a brew going and presumed they would be already calibrated from the factory.
Another lesson learned. I will certainly calibrate before my next brew (Munich Helles) will let you know the results
Best guess is they at one time calibrated it but it sat long enough unused that it lost calibration for a lack of better terms. Calibrating it should take care of your issues..
However- if your readings are still to acidotic you can add a small amount of calcium carbonate or sodium bicarbonate stir and retest. Note- I would keep in mind your starting sodium levels when picking which to use. I tend to use calcium carbonate.
