So I don't know what I did last time I brewed a beer with the HERMS after i brewed my last batch of beer. But As the son and I were getting everything ready for the brew day today, I hooked up everything and started pumping water thru the HERMS and chunks of mold came out. Rinsed everything and ran PBW and Sani thru it at that point and fixed the issue. Rest of the brew day for our Pale Ale went without issues.
So my question is for the HERMS and a Plate Chiller, best option to pack it with Sani for storage or clean everything and let it all drain out and air dry? What does everyone else do?

I used my shopvac to suck all the water out, then air dry. Seems to work well for me.

i run pbw through my plate chiller each brew, thoroughly rinse and tip up 'on the short side' so water can drain out, let it air dry. every day or so after cleaning i will tip the chiller to ensure as much water gets out as possible. i sanitize it by running hot wort through right before use and don't use any starsan.
for the herms coil, it gets pretty darn clean during lautering, running the hlt water through it. i just blow it out with my mouth and let it air dry. about once a year, i'll run some hot pbw through it. it can get an odor to it but nothing offensive and i can't say i've ever seen any chunks come out of it.

+ 1 on what Kal does. I first run the garden hose through the counter flow chiller to clean it out. Then I put the shop vac on blower mode and blow out the chiller really well and the rest air dries. The herms coil I also blow out with the shop vac on blower mode. Works great and no mold or chunks of anything. Periodically I will run hot PBW through the chiller and also the herms coil to thoroughly clean them. I also sanitize the chiller each brew day by recirculating boiling wort through it for about 15 minutes.

For the sanitizing step- is it at the last 15 mins of the boil?

I've had chunks come out during the last brew - now I make sure I blow it out with the mini-vacuum.

I have always done it that way also, the last 15 minutes of the boil.

I blow my HERMS coil out with an air compressor. I also use any remaining water from my HLT to cycle through it for my top up. This usually cleans it out pretty well.
