Apologies, if this has already been covered, but Kal how do you prevent suck back of the star san in the jar up the blow-off tubes in your fermentation setup during cold crashing beers? You use the SS brew buckets so wondering how you avoid that.

I only lower the temperature once I'm already in kegs under CO2 pressure, so suck-back can't happen.

Ok that's what I've been doing.

For your lagers do you notice a change in flavour once held at 35F for a couple months? Does that help clean up the flavour?

Yes, and yes. That's why I recommend it in all my lager recipes. Wink I suggest trying it yourself to see. Sample over time, drink it whenever you think it’s ok. The beer is never "bad" early on. It simply gets better over time.
