The HT equipment location was my first thought with the new plan as well. I'm not an HT guy at all so I'm saying this as a complete novice... but instead of carving out an alcove from the cool room you could potentially carve out the bottom left corner of your family room for that gear. Not sure what your plan was in the family room but that bottom wall could be a good place for some built-ins or shelving and that corner could be built to look as though it's part of your built-ins. Then you have easy access in the front of the HT. Again, no clue as to the implications of that...

As for the fermenting room, I like it. That far left corner of it will likely be the best place for the glycol power pack as you will likely have your trunk line coming out of the cool room there.

I like your thinking. I am not really happy taking that space out of the cooler. I am going to fiddle with some other options and see if I can't find something better. I had planned on the space under the window to probably have a couch or something there. Make a little "hang out and drink beer by the window" area. It is only about 9'9" wide, so it might make it too narrow to put the equipment there. I'll play with it and let you know what I come up with.

While it depends on the individual, usually you want to keep equipment out of the line of sight of the people in the HT as the lights can be distracting and some are bright enough to wash out the screen to some degree, destroying the contrast ratio (that you paid a lot of money for with that expensive projector).

Even putting the equipment in the back some sometimes shoot light across the room from small LED lights, enough to bump up the on-screen black level.

Years ago at my previous house there was time I had my equipment under the screen for a short while before I carved out a in-wall rack. I had blacked out most of the LED lights with little pieces of electrical tape and put some dark grey filters on some of the displays so that I could still see them but they weren't as distracting.

Does anyone ever put the equipment in a cabinet outside the room and then use an IR extender for the remotes?

Take a look here for the IR emitter/blaster setup I use for my home theater:

Basic idea is that there's on IR receiver near the top of the screen that sees any remotes you point at the screen, which then repeats/blasts the IR signal to the little emitters you stick over your various HT equipment that can be anywhere. Works great - been using the some equipment since about 2000.
