So I have a primary with a cake of US-05 that I'm thinking of harvesting from. I'm in too minds about the utility of washing the yeast. Could I not just toss in a litre (quart) of sterile water and then jar the resulting slurry? I understand that I'm getting trub etc, but what's the risk? I'll probably use the yeast again in three months.

If not using for ~3 months I'd just dump it. I find dry yeast cheap enough that I never re-use unless the initial batch was fairly clean and I'm going to pitching within a week or so. When I do that I just dump it all in and don't clean it first.

I would agree with Kal. I would use new dry yeast on your next batch. It can be found online at a fair price from time to time.

I agree with Kal and dp. You should ideally use harvested yeast within a week, and it prefers to be in a sterile, sugary and very chilled solution. Yeast storage and propagation is a tricky, time consuming and fickle beast. If you store yeast (a living organism that requires sugar and consumes oxygen like you and I) in water for three months it will all be dead and/or infected by the time you use it. Go with the dry yeast. I personally don't think it's worth risking all the time and other costs of brewing for the challenge. That being said, do what you want and report back!

Hmm... I've always heard to NOT repitch dry yeast. Only repitch liquid yeast. If I'm remembering correctly, dry yeast already has dead yeast cells and other "foreign" material. Use liquid yeast as it is pure.

Is this just marketing BS or valid?
