Getting ready to do my first electric brew soon. Reading thru the step-by-step instructions.
When all the wort is transferred to the boil kettle and the mash/lauter tun is empty is it OK to disconnect the MLT's temp probe wire from the control panel? I'm asking as I'd like to clean out the MLT while the boil kettle is in use.
By unplugging the probe I don't want to cause a surge or a problem with the MLT PID.
Thanks.

You can unplug at any time.

OK. Good.
What about plugging the probe back into the control panel when I'm finished cleaning the MLT? The control panel is on as the boil kettle is boiling. By plugging in the probe I don't want to cause a surge or a problem with the MLT PID.
