Tmavé Pivo, or Czech Dark Lager, is rapidly becoming one of my favorite styles. I've been experimenting with some new grains and recipes, thought I'd share my latest.
OG 1.054 (could take this lower too)
IBU ~30
Bohemian Dark Malt (37.4%)
Vienna (37.4%)
Bohemian pilsner (11.9%) - check out Sekado maltster
Carabohemian (5.1%)
Carafa II (5.1%) - consider as mash cap
Melanoidin (3%)
I use Magnum to bitter most of my lagers, but using all Saaz would be arguably better to style.
Magnum (or Saaz) x 60 min (23.3 IBU)
Saaz x 30 min (5.6 IBU)
Saaz x 1 min (I did 2 oz in my 15 gallon batch), could argue to leave this out completely.
May consider slight increase in 30 min addition.
Budvar yeast. I couldn't get that stain in time for my last brew so I used Czech Budejovice (WLP802) and it was great!
You could also consider a double decoction mash (preferred honestly if you have the equipment and patience). If you go that route, drop the melanoidin from the grain bill.
I may do slightly less crystal on the next batch.
Let me know if you end up brewing anything similar, would love some feedback!

Tmave Pivo is slightly hoppier with a little more malt complexity. Both should be crisp and sessionable. Schwartz is a touch cleaner tasting, but the malt complexity of a Tmave puts it slightly ahead in my book! Love them both!
I had fun experimenting with those Weyermann malts (Bohemian Dark and Carabohemian). You should check them out!
