Not sure I completely understand the question. I wasn't checking incoming water temp with any of my displays. But when I filled my HLT the water coming in was 51 degrees.

The water I was cooling from the BK was 190 degrees and I was able to get good flow and get the wort output to be under 70 degrees without a problem.

Plan on brewing for the first time on the new setup this weekend. I assume my boil off rate will be more drastic with having a larger surface area in the new kettle vs my keggles. With the keggle I was only boiling off about 2 gallons in 90 minutes. I believe I'll be closer to the 1.9/hr rate with the new kettles.

correct the wider the pot the more surface to allow boil off, the actual amount will change based on how vigorous you boil and your humidity level, I have a 2.5 gallon loss with my 20" wide kettle at 90 minutes boiling with 90% power roughly

I was able to only run the BK element at 65-68% and keep a strong boil in my keggle. You run your's at 90%?

yes but I have a 25 gallon pot and a 20" width and I like a heavy boil

Good to know. My new pot is a 22.7 gallon pot I believe around 18" wide. I'll have to play around and see what works best. Thanks for the input!

Follow up,
I was able to keep a nice rolling boil at 75%. I did make the mistake of leaving the lid on while bringing to a boil and removed the lid about 1 second to late. Little bit ran over the edges but the foam dropped the second I lifted the lid off. I was trying to do to many things at once and was distracted. I don't normally leave the lid on when bring up to boil.

Ive done the same thing, ive been leaving the lid cracked about 4 inches or so during the sparge then turning the boil element on 3/4 way through the sparge and by the time its done the temp is about 200F and take the lid off from there

That was my intent, guess I had to many samples at that point...lol
We were having a beer tasting get together while I was brewing. Note to self, wait until boil to start drinking...lol

I had my wife adjust my fermenter temp control from 54 to 62 for the Diacetyl rest for a Bohemian Pilsner.

I could try to remote control it from the internet, or I could just shoot a text from 8000 miles away.

"Please take temp reading, then reset to 62, then take another reading at lunch"

I really need to work closer to home.

HAHA... At least she's willing to do it. Mine would most likely say, "I don't know how, I'll just let it sit there until you come back".

Oh, if it was her Cider in there, she'd gladly learn how to keg it and carbonate it too.

But since her kickball team cleans out kegs of the Bohemian Pils all the time, she has to help (mind the fermenters when I'm on the road) or the team might mutiny.

I did my first pressurized beer transfer into kegs a couple days ago. Worked extremely well!
