I'm getting ready to brew this beer and was curious to why it has such a long mash time? I always mash for 90 minutes and sometimes wonder if that actually makes a difference over a 60 minute mash. But a 2 hour mash is a first for me.

Hi Richard,

The starch to sugar conversion works slower the lower the mash temperature. This one's a very low 148F so I err on the side of caution and mash longer even though 90 mins is likely enough.

Can I use Marris Otter instead of a domestic 2-row? Would that make ir=t too malty?

You could use Maris Otter but as you mentioned it would change the taste. It would be richer/breadier and slightly darker in colour. Whether that's "too" malty would be open to interpretation. I'm not sure. If I did use MO I'd probably also replace the Munich with MO and possibly part of the 10L crystal. Not sure. Lot of options here - none of them necessarily "wrong". Let us know how it turns out!

Has anyone attempted this recipe and reversed the Cl and Sulf? I’m also considering using wyeast 1318. Any thoughts?

Just tapped this today. I ended up making the recipe as is. It’s not what I expected. I’ve been corrupted by Treehouse and every other NEIPA. This beer definitely has that west coast ipa bitterness I haven’t drank in a while. It still tastes great though!

Yep! This is definitely not an NEIPA style.

Over the last ~6 months I've found myself going back and forth between various IPAs styles as I got tired of mostly mostly making NEIPAs. I need to make this one again!
