You have specified using a doorbell transformer, then converting to a 5 v dc to power the volt and ammeters. I see a lot of switched power supplies that convert directly to 5vdc from 220v ( I'm in New Zealand). Is there an issue using this style of power supply to replace your design? I'm not questioning your design, I'm just trying to learn design process here with some basic electronics.
I'm looking forward to getting this brewery built based around 3 x 70 litre pots.
