Hi guys, I read in the Brew Day: Step by Step, that the mash should be between 5.2 and 5.4 PH at 145 F°. But my PH meter from Thermoworks won't read after 50° C or 122 F°. What would be the appropriate PH at a temperature range between 113 and 122 F°?

I don't agree with taking readings at that high of a temperature. You will substantially reduce the life of your meter probe that hot, and the readings may not be accurate (depending on your meter). Plus, almost ALL references to Ph are at room temperature.
Lighter colored beers should be 5.3 - 5.4
Darker colored beers at 5.4 - 5.5
Some light lager styles can be 5.2 - 5.3
To get your sample down to room temp very quickly, I take two stainless steel bowls (One large / one small). Put the sample in the small bowl and swirl the bowl inside the larger bowl filled with cool tap water. (Careful not to get water in the sample).
Stainless transfers heat very quickly. It takes me less than a minute to get the sample in the low 70's F.
