As i've never used a HERMS system before I was wondering do i need to heat my water to strike temp or to mash temp when using this system? I'm assuming strike temp as the temp of the water can drop when adding in the malt bill.

Both will actually work.

For complete details, see our BREW DAY STEP BY STEP article: http://www.theelectricbrewery.com/brew-day-step-by-step

It'll walk you through exactly what to do. What to set when / where / to what value.
