Hey I'm brewing a Maibock (12 gal) using a Kal clone. For some reason I accidentally collected 17 gal from my sparge instead of 14.9. Obviously my pre-boil gravity was pretty low and off my anticipated numbers.

My plan to fix the problem is boil down until there's approx. 14.9 gal in my boil kettle and then start the timer on my 90 min boil.

Sound like a good plan?

Yup! There's really not much else you can do, other than rejig the recipe to make a lighter beer (ie: lower the hops too to keep the GU:IBU ratio the same).

Is there no issue/concern with "over cooking" the wort?

With a really really light tasting / light coloured beer I may be a bit concerned but not with a Maibock.

Also better than the other option which is to have a much lower ABV version of the beer you intended to make.
