I've got my Custom Hermes Coil and two 1/2'' FPT x 1/2'' Compression SS Fitting from Adventures in HomeBrewing (used the link to order.) I can't for the life of me figure out how to gracefully slip the compression pieces onto the coil. I believe that I've got to put 3 pieces (2 compression sleeves and the tightening nut) onto the coil but they don't "fit". Do I have to literally pound them onto the coil?

You normally should be able to slip the tube into the fitting with light to medium pressure when the nut is seated only finger tight or just barely loosened. If not, the tube may have a burr on it, which you need to remove with a needle file, or the tube may not be round. If this is the case you might try setting the span of an adjustable wrench to the tube OD and spin it around the end of the tube multiple times to try to coax it back into round. You will then need to sand and polish it with some fine grit sandpaper.

Too add to this: To do this we recommend you tighten it against the thinnest portion, and rotate around a few times to help round it. Do this a few time and you should be able to get the fitting on.

As a separate datapoint about this, I had a similar issue recently with a CFC I bought. I had bought two 5/8" compression fittings from MoreBeer, but one of the ferrules (the smaller one, as the larger is not used on copper) was slightly out of round.
I simply emailed MoreBeer and they shipped one out free of charge and I had it the next day. They are the best. But anyway...it's just another option if you have a similar problem.
