Where are you buying from?
I'm looking mostly for

I vision an initial cost savings, however the problem I see with bulk, is the increased risk for contamination.

Probably not much use for you but I have just bought 1kg of Safale US-05 for 72 euro from here: http://www.castlemalting.com/Default.asp?Language=English
I was paying 3.5 euro for 11.5 grams so a huge saving was made. Just need to buy a vacuum sealer as recommended by Kal: http://www.theelectricbrewery.com/parts-list-using?page=11
Try searching for a local brewers wholesale company as in addition to the savings I made on the yeast, I have essentially halved my hops and malt bills by sourcing everything wholesale rather than my local brewers supply shop.
