That should be an interesting. Let us know how it works out. It should really accentuate the peach flavours.

Yes, the beer is described as peachy to begin with so it should play right into that. This will be the second beer we've done with this yeast (gen 2) as I washed it from a Heady Topper clone that everyone in my brew club loved. I don't think it gets clovey this early.

I brewed this 7 days ago. All the numbers were right on. I just checked gravity in preparation for the first round of dry hopping. It's 1.034 from 1.092. That was a little higher than I expected. I'll admit I'm not sure where it should be though. Should I wait a few more days or go ahead and add the first round? If I had to leave the hopper in there longer for finish fermentation, would there be any negatives to that?

I'd wait until fermentation is near complete, under 1.020 or so. No harm in waiting 2 weeks until it's completely done too (about 2 weeks) as the first dry hops are in the primary.
