I'm taking out my analog thermometer dial and plugging the 7/8 whole, thinking about a nipple with caps on both ends, going weld-less here what are your thoughts?

I did something similar on a hole in my BK with a close nipple, cap on outside and lock nut on inside. Works fine. The hole was a 13/16" but I would think it'd work fine on a 7/8".

I was thinking that the pipe hole on the inside might get mold inside it

funny you say that, thought the same thing bought 2 and that does not plug a 7/8 , 13/16 hole more like 1/2" very deceiving

I haven't seen that but I guess that could be a possibility if it wasn't cleaned right away...

the ss caps on amazon are a 3 to 5 week wait, anyone else know of some cheap 2 dollar caps

thanks, Ill try it .... doesn't say if their 304 or not, I can get 316 but want 304 stainless just to be safe

Pretty sure his default is 304. He has a notice on the fittings page for example that says 316 is available but contact him for price and availability.
UPDATE: Actually the item description says it's 304 - 150# 304 NPT THREADED CAP FPT X FPT
