Hello,
i am about to order my 7bbl brewhouse from China and i'm thinking about making the control panel myself (with the help of an electrician, off course). That's because i don't like how the Chinese made control panels look, i want to arrange it similar to the ones on this site.
The brewhouse will have 48 kw in the boil kettle and the HLT, from 6 pieces of 8 kw heating elements. How would someone switch between those two vessels heating elements? Contactors for such power are expensive and hard to get. What else can i do?
I found some industrial grade one phase solid state relays (100-200 amps) and i will use one for each phase. Don't know how should i switch between the heating elements or at least turn them off.

The basic premises for how you'd want to do this is similar to what is done in our control panel designs. See our 1bbl+ panel design here: http://www.theelectricbrewery.com/forum/viewtopic.php?t=24918
Main difference is the greatly increased power so you'd need to size the parts accordingly.

Correct. Parts rated for more than 50A are considerably more expensive and harder to find as they are specialized (not standardized). For example, there is no NEMA standard for plugs/receptacles above 50A. So a control panel above 50A typically need to be hard-wired which itself introduces complexities and other concerns such as electrical permitting as now the control panel becomes part of the building wiring. Given your size, going 3 phase would probably make sense too. Talk to your electrician. They should be able to help.
