Black Pug Pugkin (pumpkin) Ale

Batch Size = 6.0 Gallons
SG = 1.060
FG = 1.018
Bitterness = 28.3 IBUs
Color = 14.1 SRM
ABV = 5.5% (Estimated)
Efficiency = 88%

Bitterness ratio = 0.472


Grain Bill:
6 lbs Pale Malt (2 Row) US
2 lbs Caramel/Crystal Malt - 60L
1 lbs Munich Malt
1 lbs Wheat, Flaked
12.0 oz Victory Malt
5 29 oz cans of Pumpkin Puree * (See Notes Below)
1 lbs Rice Hulls


Mash Schedule:
Mash at 152 degrees - 90 minutes
Add Pumpkin to Mash for about 60 minutes* (See Notes below for brewing notes)

Mash out at 168-170
Fly sparge with 168-170-degee water for 10 minutes.

Boil:
0.65 oz Magnum Hops - 60min boil
Whirfloc - 15 minutes
2 tsp Pumpkin Pie Spice - 5 minutes

Ferment:
White Labs WLP008 East Coast Ale in 1.5L starter

Primary Ferment for 7days:
Secondary for 14 days
Add vanilla, spice, graham cracker extract to secondary ** (See Note)


Notes:

* Spread pumpkin on baking sheet and sprinkle 1/2 cup of brown sugar on top. Bake at 350 for 1 hour.

DO NOT add entire bunch of pumpkin to Mash. I mashed all the pumpkin for about 60 minutes and ended up with a seriously stuck grain bed (even with 1 lb of rice hulls). After 20 minutes of mashing, I couldn't recirculate the mash or sparge without manually stirring up the entire mash tun contents up to get the flow going, allowing the recirculation to clear, and repeating about a half a dozen times. If I did this recipe again, I would add about 1/2 of the pumpkin to Mash for about 20 minutes (with a total of 2 pounds of rice hulls instead of 1 pound) and add the remaining 1/2 of the pumpkin to the boil for about 30 minutes. Be sure to use a hop screen to strain.

** When starting secondary, add vanilla extract made from 1 scraped vanilla bean and 2 TBS of vodka (soaked for 2 weeks), 1/2 tsp Graham Cracker Extract and 1 tsp of pumpkin pie spice steeped in a few ounces of boiled water (to wet and keep from floating).

I drained the yeast and trub from the bottom valve after the first week and also again after the 2nd week. I only ended up losing about 1/2 gallon total so the hop strainer also really helped get a lot of the pumpkin fibers out.

This is it as it went into the keg.

I was worried it would be super cloudy, but the pumpkin seemed to settle out really well. The cold crash will clear it up further.

You got me totally itching for a Pumpkin Beer. I put together a recipe, bought the pumpkin and will be brewing it shortly! Thanks for the inspiration.

It turned out well. I missed the target gravity by 0.03 (1.061 vs a target of 1.064). The pumpkin smells amazing. It's going to be around a 7% ABV beer.

Nice looking recipe. I am skipping the pumpkin beer this year since I still haven't finished my system Embarassed

Boiling the pumpkin works well. Last year I boiled all of the pumpkin I used in my pumpkin beer. I was just so paranoid about getting a stuck sparge.
