Black Pug Coconut Porter
Batch Size = 6.0 Gallons
SG = 1.056
Bitterness = 29.8 IBUs
Color = 33.7 SRM
ABV = 6.1% (Estimated)
Efficiency = 90%
Bitterness ratio = 0.532
Ingredients:
Mash:
8 lbs Marris Otter
1 lb Caramel/Cyrstal 40L
8 oz Chocolate Malt
8 oz Roasted Barley <-- not traditionally use in a porter, but rather a Stout... so this makes sort of like a light stout or a roasted Porter
4 oz Black Patent
Mash at 152 degrees - 90 minutes
Mash out at 168-170
Fly sparge with 168-170-degee water for 10 minutes.
Boil:
0.5 oz Northern Brewer - 60min boil
1 oz Goldings - 30 min
Whirfloc - 15minutes
0.5 oz Goldings - 5 min
Ferment:
White Labs WLP007 Dry English Ale in 1.5L starter
Primary Ferment for 7-10 days or until FG of 1.011-1.012
Secondary for 7 days and add 24 ounces of toasted coconut to the secondary for a week! <--- toast nice and brown all over to reduce oils and minimize head retention issues

One thing that I would add to your recipes is your efficiency - if someone wants to try it out, they can more easily determine how much of each for their system. My 2 cents...

Holy chunky yeast! WLP007 English Dry Ale yeast flocculates like a MO-FO. It's was getting almost chunky looking in the flask/stirplate.
At first I thought something was wrong, but researched and found out that this is pretty normal!

Yeah some yeasts actually state that you should "raus!" (insert Sgt. Schultz's voice) it every day or so to make sure that it ferments completely.
Give us a heads up on your progress. I did two different batches this weekend (Fullers ESB clone and a Pale Ale).

This WLP007 Dry English Ale yeast fermented out super fast. At 48 hours it was down to 1.014... I'm going to let it rest until next week, then dump the trub and yeast cake... and pop in the toasted coconut for 1-2 weeks and see what happens!

OK, I just drained the yeast from the bottom of my conical. It was extra thick and pasty. Since I utilized dark grains for this brew, it was also dark brown in color...
So let's just say that the discharge of a thick pasty dark brown substance from my conical bottom drain did not look all that pleasant. LOL
It reminds me... I need to take the dogs out.

This sounds great! I wonder if the coconut has oils that will affect the head of the beer.... let me know how it turns out. Sounds great though! I have also gone through the yeast scare that you had. It almost looks like cottage cheese curds floating around in the flask.

I have seen a number of coconut porters and haven't come across any reports of the coconut affecting head retention.
Can't wait to get this kegged. It's been in the primary/secondary 3 weeks already.
I'd guess 2-3 more weeks to drinking time (one more week in secondary and 10 days or so to carb up)

I kegged this bad boy today. My "brewmaster's sample" tasted very good. I could taste the coconut. It was not overpowering, but it was definitely there.
From what I read, it will get a little more subdued once carbed and aged.

I think it was successful!
The coconut is present in the nose then on the palate... and subtle.
The WLP007 Dry English Ale is a good compliment to the porter.

Looks like it turned out great! What do you think of the amount of coconut used? and it clearly didn't affect the head at all. I was a little surprised at the gypsum addition. Any specific reason for it?
I'll be trying my own version of this soon! Thanks for the great idea.
