I am not wiring yet, just studying the diagrams. The volt meter diagram shows low voltage wire from the red hot leg of the boil relay and the black hot leg from the hot bus to the voltmeter signal inputs. Wouldn't that wire be completing the full 240V circuit and is 22ga wire heavy enough for this? Is it ok because that circuit would not carry high amperage?

You are correct, Choosing the right wire gauge is all about amperage. The wire is carrying next to no current at all. Basically zero. It's measuring the voltage differential only. You'll note the little wire connectors that come with the meters use really tiny wire too. The resistance in the volt meter is extremely high so no current flows.

For the amp meter the resistor is the shunt. (A shunt is a precision resistor). So the current flow in that is also extremely low. The amp meter knows the current because it measures the tiny voltage drop across the shunt/resistor. The actual bulk of the current does not flow through the amp meter.

Make sure the wire is rated to at least 240V however. No harm in using larger (14 ga or similar) wire too of course.

No problems! Always good to understand what's going on when you wire and ask questions. You'll have a better appreciation for it and enjoy the process a lot more (in my humble opinion).
