Hi Folks,
Has anyone considered "direct firing" the mash tun with an induction cooktop? Looks like a typical 15A 120v circuit could provide around 10K BTU via a countertop unit of 1500w (http://theinductionsite.com/how-induction-works.shtml) to an appropriate mash tun. The Blichmann spec'd in Kal's very fine system probably won't work for this since the SS is non-magnetic on these kettles.
I'm really into wheat / oat / rye based brews (like Witbeer and Roggenbier) and infusion mashing doesn't seem to deal well with lots of Oats, Flaked Wheat and Rye in the grain bill. So, a step mash really helps but most recipes I've looked at suggest a rise time from the protein rest to saccharification temps at 10-15 minutes. Can this system, or any HERMS ramp up that quickly (122F to 154F)? I've also had stuck mash issues on my most recent batch of Witbier so circulating any wort through the HERMS loop could be a problem. No circulation obviously means no temperature rise in a HERMS only system.
I'm thinking of using the induction burner in conjunction with the HERMS coil to speed up the steps, much like Sabco does with their RIMS based system and a gas burner under the mash tun in their Brewmagic system. It could also give me the temperature step without circulating through the HERMS coil.
So, does anyone have any experience with induction heating? What brew pots work? I have a Chefmate clad SS pot that will hold a magnet on the bottom (but not the sides). From what I've read, that pot should work.

According to customer service at Morebeer, their heavy duty kettles have a magnetic outer layer on the bottom. Northern Brewer's Megapots also are said to be "induction ready". while the Polarware, Blichmann and most of the "economy" kettles out there are not since they do not have the extra layer(s) with a different grade of SS which can be magnetized.
