Sake is called rice wine in my hometown. Rice wine is sake made from rice as the main raw material for sake.
Rice wine is usually made from glutinous rice. Traditionally, the glutinous rice is washed first, soaked for about 4 to 5 hours, and then steamed.

After steaming, take the glutinous rice out and cool it. Then sprinkle koji on the glutinous rice, mix well while sprinkling, and flatten the rice slightly. After that, cover the glutinous rice with a cloth, put it in a warm place, and use it after a few days.
