Kal, thanks. I also read your comments on ATC and I believe I understand them. Basically, when you're measuring pH at mash temp, ATC will not give you a pH readout at room temperature, but fortunately, we know what the recommended pH range should be at mash temp which the pH meter will give. Therefore, there's no need to cool down the mash sample as long as I know what the pH needs to be at mash temp - correct?
