Thanks for the details. Kveik does indeed drop the pH more than other yeasts. It's a known "issue" with Kveik. Works in some beers, not so much with others so brewers have to compensate. More info: https://www.escarpmentlabs.com/single-post/2019/10/20/Crispy-brewing-with-kveik

I have 2 yeast built and saved in pint jars Hothead for clean beers and Kveik for hoppy beers, I've never been disappointed and they do have a very good back flavor to each, it's almost a sweet flavor
