Two simple questions. This is not that serious of a question, probably more of a matter of opinion. I am about to start my build and have 3 30 gallon blichmanns, two are used g1s and 1 is a new g2. I have the false bottom for the g1 which seems to fit fine in the g2. Pretty sure it doesn't matter at all, but before i go punching holes in them I thought id ask if it made any difference at all as to which kettle was used for which purpose. Aesthetically, i think the new g2 would look best on one of the ends, so i was going to use it for the boil kettle.
Secondly, I am missing a few pieces of equipment still, a hood being one of them. I am seriously entertaining the idea of a steam condenser. I see the feed on it here on the forum and have read most info i can find. My question is, will this truly eliminate the need for a hood? Thanks for the advise and opinions.

Hi!

Off the top of my head I can't think of a reason reason why one kettle would be better suited for the newer G2 model if you follow my build design. Completely up to you where you place it.

I'm not a fan of only using a steam condenser as then there's nothing to remove all that extra heat from the room. More info in this post: http://www.theelectricbrewery.com/forum/viewtopic.php?p=330833#330833
Some love them, others say you still end up with "warm humid smelly air" that needs to be evacuated.

I also don't like all that water usage and the lower boil off rate. I like to boil hard with high boil off rate as I find it helps with long term stability of the product.

YMMV!
