First off, any Belgian beer that I have tried with this yeast is amazing. I believe it is by far my favorite strain. The problem is I can't seem to be successful with it. I have made several beers with this strain (about 5-6). It has failed to attenuate every time. Every single time. I always end up at around 1.030. These are all high gravity beers. I've tried over pitching, under pitching, or the standard 1 million cells / ml / degree plato. I've tried every temperature combination. Low 60's and finish in the mid-80's and everything between. I've used WLP500 on several very similar beers and it always hits the mark. I don't have this problem in general, ever. I have no idea why I'm having issues with this yeast. Judging by other posts, I'm not the only one. I just can't seem to find the solution. Most recent example is an Abt 12 clone. It's my all time favorite beer, so I'm very eager to make something similar.

Fly sparge with 9.60 gal water at 168.0 F.

OG 1.092. Underpitched per the recipe at around 630 Billion cells. Pure O2 for 90 seconds

Pitched at 64 and increased by 1 degree every 12 hours. Sitting at 80 degrees and 1.030. I'm not sure taking the temperature up anymore will help and the gravity hasn't changed in about 5 days. I'm just going to do another starter of wlp530 and see if that finishes this thing off, but this is starting to get irritating. I'm hoping someone out there has insight to what I'm missing.

How and when are you measuring your final gravity to determine attenuation?

With a hydrometer.
OG = 1.092
@7 days = 1.040
@14 days = 1.030
@21 days = 1.030
