Im using beersmith, or bru n water, or ez water, havent decided yet, as I have not made up my mind on when I want to attempt to adjust my water yet.

Beersmith asks the amount of water needed. My question is, if I fill my kettle with 18-20 gallons, then adjust, then transfer strike water, what happens when I top off with clean water from the sink? How do I account for adding my water whos profile will be from the sink and different to what I have adjusted?

Would I fill heat and transfer, then top off, and adjust the HLT and MLT seperately? Or would this throw off the profile because I will sparge with the corrected water on top of the already corrected mash water?

Im reading the water page now, and I see you add during grain addition, and add during boil. If this is the answer, I am sorry for not searching before hand!
