This is my first post on this site. Currently in the planning stages for a basement electric brewery build. Does anyone have any thoughts about these two options? Cost is obviously a consideration, but so are aesthetics and moisture resistance. I'd love to hear from those who have considered these options to see what they chose and why.

Welcome to the forum!

Completely up to you what you choose as it's purely aesthetics and everyone has different tastes. I've seen both done well.

I would consider a basement brewery like a kitchen: So use finishes similar to what you'd use in a kitchen. This means at a minimum you should paint the drywall with a semigloss (wipe-able) paint, similar to what's done in a bathroom too, but to a lesser degree because your brewery won't (or shouldn't) get all steamy like a bathroom might.

Then whether you choose tile backsplash or something else is completely up to you and is for looks only. It's not a requirement. Just like a kitchen, any splashing is accidental and is minimal. Any splashing I've had over the last ~10 years has been very minimal.

Just like a kitchen, most do not drain on to the floor on purpose (I don't) but spills can happen so best to choose something on the floor that won't be damaged by a spill. For example, stay away from carpet or hardwood (even though I know many kitchens are done with hardwood). Best to use tile, linoleum, or just concrete (finished or not).
