Out of curiosity, what transformers and power supplies are being used? What models/brands? I did not see any pictures of them.
Are separate transformers and power supplies used?

I hope you find the issue! Welcome to the forum!

Here is a picture of the transformer I purchased and a picture of the power supply, I don't remember the manufacturer.

I see you're using rubber grommets to keep the power supply off the metal backplate. Be careful doing this. They can often short against the backplate because of long part leads. Be careful with the metal screws you use as well as they can sometimes touch the copper traces on the back of the power supply circuit board which then shorts circuitry against the backplate.

People have had lots of issues with this so it's why we recommend in our instructions that that nylon standoffs and nylon screws be used instead, and why we include them with our power supplies. You can see a picture here: https://shop.theelectricbrewery.com/products/power-supply

Cheers!

Yes, I had a buddy who informed me of that he had that same issue with his build. I will double check, but i'm almost certain that they are high enough as they are a harder plastic grommet and don't have much flex to them.

Check the underside of the power supplies to see if any of the copper traces are up against the screw holes in that particular model. That's a common way of having shorts occur.

But then again, if the meters do power up, this isn't the issue.

When I tested the panel I checked to make sure that nothing under the power supplies was touching anything. But being that I get voltage all the way to the meters means that they are working fine. There is some internal issue with the meters. Being that the only way to trip the panel is to have one or both meters setup to read voltage and amps and the only way for the panel to work is with both disconnected, it leads me to believe that they need to be replaced. Atleast that will tell us if that is the problem which I am confident it is.

Cheers

Will do. Here are some pictures of the panel I custom designed and built for my electric brewery.
