Cool!

The 61 degrees would be a touch low for how I like to brew... my fridges can bet set to 39-64F. When actively fermenting the wort's usually 2F higher so I find the 64F value works well for me for brewing ales I want to be actively fermenting at 64-66F. To go above that near the end of fermentation I just turn them off and the wort rises slowly to about 70F (room temp).

i have a homemade "chamber" that holds 3 buckets with a homemade controller. one lightbulb inside lets me get as warm as needed. i use it for ales.
i'll be using the new frig to ferment lagers

Kal, do you know how much height was added to the top of your brew bucket once you added the domed lid, clamp and fittings? Looking at wine fridges and trying to figure out how much height I need beyond the standard brew bucket (20.5").
