I'm currently trying to up my coffee roasting game, and was thinking about adding a humidity sensor to my roaster setup. The probe would likely need to go in the roaster exhaust as temperatures typically reach 450F inside the roaster drum.

Do any of you have experience with high temperature humidity measurement? I'm trying to figure out the most economical way to get the data I want.
