The temp probe wiring seems a bit tight, especially to the brew kettle.
I have enough parts left over to make a few patch cables to extend the temp probe cables. Female XLR3 on one end and a male XLR3 on the other end. Simple pass thru wiring with the stainless wire wrap, braided sleeving and shrink tubing.
My question. Max temp probe wiring before the resistance in the additional wiring causes problems with either the sensor or the PID?

I am considering trying a 3 foot XLR (Microphone) cable as an extender. Has anyone ever tried this?

The wire doesn't matter as long as it is at least a similar gauge as what comes on the supplied cables. I've used Cat5 cable to extend my wires. As Kal stated it just causes resistance that you will need to offset by calibrating your probes again.
