Hi All,

I'm making a vanilla porter. What is the best way to extract the flavor out of the beans? I've read that if you just split the bean, remove the seeds, and throw it in the secondary it won't extract the vanilla flavor enough due to the low alcohol content. The best way is to split the beans (2 for 5-gallons), scrape the seeds, and cut the husks into 1-inch pieces. Then, in a small jar, pour in some vodka just enough to cover. Let sit for an hour or two, then pour the entire thing into the secondary. This essentially creates your own extract and will make the vanilla flavor more pronounced. Does anyone have any other recommendations on this process? Also, if someone's done this before, won't the seeds show up in the finished beer?

not sure on this one, but my wife loves a nice vanilla porter. I would definitely add in a secondary much like one would dry hop; but am not certain on the best method to do it. If you cant figure it out here, maybe ask someone at your LHBS or nano brewery. OR- my personal favorite- wing it and pray.

either way, let me know how this turns out and your chosen method.

would soaking in vodka be a must or could one use Bourbon or something of the likes?

Guess it depends on what you want to get out of it. Vodka is more neutral in flavor. If you want a bit of bourbon flavor, go for it. Might over power the vanilla flavor though.

I've made one several times.. first remember the vanilla flavor and aroma dissipates rather quickly.. so what you have after two weeks will be half that at 4 to 5 weeks.. so drink up quickly.. ( not a problem at my house )

i've tried several ways from fresh vanilla beans, splits and scraped in a hopback and in the secondary.. have also put good extract in the secondary and a tablespoon in the bottling bucket for 5 gal.

What about the seeds that you scrape. Do you put that in the vodka as well?

Yep, I just cut the bean to expose the seeds. Can't tell you if that is correct or not, but just what I do.
