I've always heard and read about the importance of an uncovered boil. Of course, an uncovered rapid boil leads to evaporation. The evaporation rate changes based on the time of the years, humidity in the air, etc.

Reading Gregory Noonan's "New Brewing Lager Beer" book on page 157 I read "Never boil for less than the prescribed time. The kettle may be partly covered for part of the boil to control evaporation, but he wort must be vigorously boiled, uncovered, for at least the final thirty minutes to drive off harsh, volatile kettle-hop and malt oils, sulphur compounds, ketones and esters."

Interested in input on the quote above. Only fully uncovering for the final 30 minutes would make the evaporation estimate more accurate than keeping uncovered for the whole 90 or 60 minute boil.

Thoughts?

Where do you brew Kraig? If you brew indoors you'll find that the boil off rate doesn't vary. (It doesn't for me). If you brew outdoors in your location which goes from cold to hot throughout the year (Manassas, VA) you'll find boil off rate does vary.

You will still get lots of boiloff even with the lid on as it'll push the lid up and escape.

While it's a highly debated subject, I like to have a nice long & hard boil. I find it (together with proper pH) helps with clarity and long term stability.

Feel free to try different ways yourself.

It will also most likely be beer dependant.

seeing as it is a lager book, i'm guessing a lot of german beers with pilsner malt? agreed you want adequate boil times with the cover off to drive off dms.
