Brewed a Scottish but it didn't have the flavor profile I was looking for. In Belhaven there is an treacle, almost sherryesque flavor that I'd like to achieve. I think my grist is right on and I boiled down almost 2 gallons of wort that I added back to the primary. Still didn't get that flavor profile. Any suggestions? Is Belhaven using any thing other than grain to achieve that flavor?
