I am brewing my first lager and wonder when I should start the "Diacetyl rest". It has been fermenting for 7 days at 50F. The OG was 1.062 and the current reading is 1.021. I've read everything from what till primary fermentation is done, 75%, and 5-11 points to projected. What has everyone else done? I was going to start ramping up the temp in the AM, but wanted some feedback.

I usually wait until it's a only a few points from final gravity, like 3-5 or so. It's not overly critical (IMHO). By the time you've gotten down that low you can ramp up the temp and still get a clean lager.
