When calculating a yeast starter, do I calculate on the beginning amount (for example 11 gallons) or the final amount (example 10 gallons)?
Beginning amount is higher due to loses, trub, etc.

You calculate based on the amount of wort that the yeast needs to work on, so the amount that you'll be pitching into.
