I have 100 service at my current residence. I checked the panel and do not have any 30 amp breakers currently. I do have room to add another breaker - assuming I can get a 30 Amp GFCI breaker in there, wired up, and functional, is it possible to run the brewery on 100 amp service and not shut down the entire house? Anything to keep an eye on, like not running the air conditioner, vacuum cleaner, and hair dryer all while brewing? The panel is in my garage which is where I would be brewing.

I have the same service and the only thing I watch out for is the dryer the oven and air on at the same time, each one is 30 amps so thats 90, the things you mentioned should be fine

OK thanks! The largest breaker I see in my panel is 20 Amp and my stove and furnace are both natural gas. I think the dryer and the AC are my big ones to worry about.

I think you should be fine.
My previous house had a 100A service and we had the following large current items:
- 30A brewery
- A/C
- Dryer
- Stove
I never had any issues.
Hair dryers and vacuum cleaners can draw 10-15 amps but it's rare that there's enough of them running at the same time.
