The recipes on this site say that they are 12.0 gallons post-boil volume at 68 degrees Fahrenheit. Is this to say, 12.0 gallons finished product, accounting for cooling shrinkage, but NOT trub loss?
So in reality you're probably looking at 11.5-11.75 gallons into the fermenters? Is that accurate?

Correct.

Correct, though some beers will lose even more because of all the kettle hops. You may then lose even more in the primary / secondary from dry hopping.
Some lighter beers with very little hops I'll sometimes brew to have 11 gallons post-boil (at 68F). YYMV. Feel free to scale based on your setup / how you brew / etc.
