I ran a cooling experiment on the fermentation cabinets I'm building, and created a spreadsheet to track temperature over time. I can't seem to figure out how to get the X-axis to show a linear progression of time over 50 hours, and the data points to correspond to the temperatures at "hours after 09:55 AM". I've watched a few online videos, but so far they haven't shown me what to do. I've attached a screenshot, and the actual Spreadsheet. Any help is appreciated.

It looks like the plot type you chose was a line graph but what you want instead is an X-Y plot. By default Excel will use the left most column of your selected data as the X-axis for the X-Y plot, so ignore the first column and select the "Hours after 9:55" along with the three columns to the right and create a new X-Y plot from the list of chart types.

Select all four columns and then select SCATTER PLOT.

Thanks for the prompt help. That worked! I'm going to try to finish the trim on the cabinets today and will post pictures soon.
