I'm in the building stages and I have a counter that is laminate. Should I put something under the kettles to protect it?

Yes. You could discolour or melt a laminate countertop with the heat. I would use cork trivets under the boil kettle at a minimum. Not sure about the MLT or HLT (they're not as hot). Check to see what the laminate manufacturer recommends as far as max heat goes and contact time.
